Buying and Storing: How to Keep Lettuce Fresh?

Lettuce is very sensitive and should therefore only be bought as needed and used as soon as possible. If you still have to store lettuce for a long time, you should use regional products with short transport routes and store the lettuce in plastic packaging in the vegetable compartment of the refrigerator. A head of lettuce can be kept for several days, lettuce that has already been cut can be kept for at least two days.

When buying the lettuce, you should make sure that the stalk of the head looks as light and fresh as possible. If the cut surface is already brownish, the lettuce is by no means spoiled, but it is probably a bit older. It should ideally be used up straight away and not stored any longer. He may already have been on a long journey. When it comes to seasonal salads from the region, the routes from the field to the supermarket to the kitchen are the shortest. With regard to the different types of lettuce, the firmer the leaves are, the longer the vegetables can be stored. Iceberg lettuce, romaine lettuce, frillice and radicchio keep for a relatively long time, while lettuce varieties with soft leaves should be used up as quickly as possible.

Before you refrigerate the lettuce, make sure the leaves are dry and remove any brown or rotten spots. Lettuce that has already been washed should therefore be drained carefully before storage or dried with a salad spinner. Then put it in a plastic bag with air holes to protect the leaves from drying out. If you already bought the lettuce in a plastic packaging with air holes, you can also store it in it. A fresh food box also works well. You can also drizzle a few drops of lemon juice or vinegar on a damp cloth to slow down the ripening process. Wrapping the lettuce in it prevents wilting and nutrient loss.

In general, lettuce should always be stored in the vegetable compartment of the refrigerator – whether as a whole head or just the cut leaves. Under no circumstances should lettuce be stored in the immediate vicinity of ripening fruits such as tomatoes or apples. They give off the ripening gas ethylene, which causes the lettuce leaves to spoil more quickly.

Salad with root balls is also increasingly being offered. In comparison, these lettuce plants last longer and should not be stored in the dark, i.e. not in the refrigerator, as they are living plants. Depending on your needs, you can harvest the heads of lettuce with balls as a whole or gradually leaf by leaf and use them fresh in salads. Make sure the soil of the bales maintains a light moisture to keep the lettuce fresh.
