Make Tabasco yourself – you need these ingredients
- For your specially made Tabasco, you need 100 grams of sea salt, 150 milliliters of high-quality white wine, or brandy vinegar. You also need a kilogram of hot chilies. Ideally, you should use red Tabasco chilies or Piri-Piri chilies.
- You will need a blender, a fine kitchen sieve, preserving jars, and small glasses or dosing bottles for finished Tabasco. You also need a bowl.
Tabasco – this is how you succeed in the production
- First, wash the chili peppers. Then remove all stems. Discard moldy pods straight away. Then put the clean chilies in the bowl and crush them with the hand blender until a pulpy mass is formed.
- Now add the sea salt. Mix in with either a mixer or a large spoon. Then pour the mixture into the jars. Sprinkle a layer of salt on top of the chili. This prevents the formation of mold or fungus.
- Note: The jars must be sterilized.
- Close the jars tightly and store them in a warm room for at least four weeks. A temperature between 20 and 25 degrees Celsius is ideal. After four weeks, open the jars and mix the mixture with the vinegar.
- Now put the new mixture in the fridge for a week. Finally, sift the chili sauce through the fine kitchen sieve and pour it into individual bottles or glasses. Your Tabasco for spicy food will keep for a few months in the fridge.
