The fact that Enoki are also known as winter or snow mushrooms is due to their frost-resistant fruiting bodies. These enable them to grow continuously in nature, even in cool temperatures from autumn to spring.

Taste

The delicate white mushrooms with their long, velvety stalks and small heads have a sweet, mild taste.

Use

Enoki mushrooms can be used very well, e.g. B. in salads, eat raw. Lightly brush or dry clean the mushrooms. Cut off the rootstock. Otherwise, the handle and the so-called cap can be used in their entirety. In light cuisine, this mushroom is also used in soups or pasta.

Storage

Stored in the refrigerator, enoki mushrooms can be kept for up to a week.
