If you like ice cream and nuts, then a hazelnut parfait is the perfect dessert after a festive meal. With our instructions and our recipe, you can make the dessert in no time.

This is what you need for a hazelnut parfait

You only need a few ingredients for the delicious ice cream specialty. Our recipe is suitable for up to six people.

  • For a hazelnut parfait, you need 75 g of ground hazelnuts.
  • Also, measure out 375ml of milk.
  • 75 g of sugar provides the necessary sweetness.
  • Separate three eggs, you only need the yolks for the parfait.
  • A hazelnut parfait can be combined very well with rum. For six people you should have 6cl of rum for the mass.
  • You need 200 ml of cream and a pinch of salt.
  • It is best to pour the parfait into a loaf pan. This gives it a nice shape and makes it easy to cut.
  • To make it easier to lift the parfait out of the mold later, have cling film ready.

Hazelnut Parfait: A simple recipe

Once you have all the ingredients and supplies, start preparing.

  1. Lightly toast the hazelnuts in a frying pan.
  2. Take the nuts out of the pan and mix them with the milk.
  3. Beat the egg yolks with the sugar over a hot water bath to form a thick cream.
  4. Add the hazelnut-milk mixture and the rum.
  5. Now, without the hot water bath, continue to stir the cream into an even mass.
  6. While the cream has cooled completely, whip the cream with a pinch of salt until stiff and fold into the cream.
  7. Place the parfait in a loaf tin lined with cling film and cover the dessert with additional film.
  8. Now the parfait has to go in the freezer for about six hours.
  9. Remove the parfait from the pan about 20 minutes before serving. Remove the foil and garnish the dessert with some fresh berries.
