Green beans as a stew – a recipe for the cold season

All kinds of delicious recipes can be prepared from green beans. Refine a stew with it, for example. You will need 250 grams of green beans, 200 grams of peas, soup vegetables, 4 potatoes, 1 onion, vegetable stock, salt, pepper, and optionally 600 grams of beef and parsley.

  • Bring a liter of water to a boil in a large saucepan. Add a tablespoon of vegetable broth.
  • Cut the peeled potatoes and beef into bite-sized pieces. Dice the remaining vegetables a little smaller.
  • Now fry the diced onions in some oil. Then optionally add the beef.
  • Add the meat, onion, and potatoes to the vegetable broth and cook for half an hour.
  • Now add the remaining vegetables and let the stew cook for another 30 minutes.
  • Finally, season the vegetable stew with salt and pepper. If you like, you can flavor it with parsley.

Green Bean Salad

This green bean salad is very classic and yet always delicious. You need 500 grams of green beans, 1 finely diced onion, vinegar, oil, sugar, salt, and pepper.

  • Boil the washed, chopped beans in salted water for a quarter of an hour.
  • For the dressing, mix three tablespoons of vinegar, two tablespoons of oil, one teaspoon of salt, and three teaspoons of sugar with the onions. Season with pepper.
  • Drain the beans in a colander. Immediately afterward, while still warm, mix them with the dressing in a bowl.
  • The salad tastes especially good when left in the fridge overnight.

Quick soup with beans

A soup with green beans is quick and easy. You will need 200 grams of green beans, 600 grams of potatoes, 1 carrot, salt, pepper, and olive oil.

  • Wash the beans and cut them into small pieces. Potatoes and carrots are peeled and diced.
  • Now everything is pre-cooked: Put the beans in salted water and cook them for about 15 minutes. In a separate pot, cook the potatoes and carrots in salted water.
  • Mash the cooked potatoes and carrots. Refine the soup puree with salt, pepper, and olive oil.
  • Finally, put the pureed soup on a soup plate and add the chunky beans.
  • Tip: If you don’t want to do without meat, you can add bacon or Wiener sausages to the soup.
