Fresh zucchini is a real treasure trove of nutrients, vitamins, and minerals. Freezing zucchini for the winter is a good option to provide yourself with healthy food because when you freeze the vegetable retains all its properties.
How to freeze zucchini for winter diced frying
Zucchini carefully wash and cut off the stalks, and cut the vegetable into cubes. Boil water and put zucchini in it for 2-3 minutes. Drain the boiling water together with the zucchini in a colander, pour the vegetables into a deep container, and pour in ice water. Drain the water again, put the zucchini on a paper towel, and wait until they are completely dry.
Take a flat dish or baking tray, cover it with foil, lay out a layer of zucchini, and send it to the freezer for 3-4 hours. When the vegetables are frozen, pour them into a bag or transfer them to a container and put them back into the freezer.
How to freeze zucchini in circles – recipe
Wash zucchinis, cut them into slices, the thickness of which will be at least 0.7 cm, boil water and put them in it for 2-3 minutes. Drain the boiling water together with the zucchini in a colander, transfer the vegetables to a deep container, and pour in ice water.
Drain again, place the zucchini on a paper towel, and wait until completely dry. Spread the zucchini on a flat dish lined with cling film. Chill in the freezer for 3 to 4 hours, then put them in a container or put them in a bag.
How to freeze grated zucchini for winter for pancakes
Grated zucchini can be frozen in two ways. In the first case, you need to wash the vegetables, grate them, and squeeze the liquid through gauze. Put into bags, remove the air from them, and hide them in the freezer. If you want to freeze heat-treated grated zucchini, then follow the instructions:
- Grate zucchini on a coarse grater and boil water;
- put in a deep bowl with a sieve on top, put the zucchini mixture in it;
- bring zucchini mixture to a boil, dipping the sieve with zucchini in hot water;
- hold zucchini in hot water, then quickly transfer to water with ice;
- cool the zucchini completely in the water and squeeze it by pressing it against the walls of the sieve;
- put the grated zucchini into a bag so that it forms an even flat layer.
IMPORTANT: squeezing zucchini by hand is strongly not recommended – soft, they are more susceptible to deformation and may turn into mush.
