Healthy Dinner: A Delicious and Quick Zucchini Recipe

Recipe for cooking zucchini pancakes

2 medium zucchini. It is advisable to take young vegetables, then there is no need to peel and seed them. Grate them on a medium grater and leave them for a while. The vegetables will release juice, which will then need to be drained.

2 medium eggs. 8 tablespoons of oatmeal. In this recipe, we replace flour with oatmeal. This way we not only reduce the calorie content but also make the dish even richer in fiber. You can use instant cereal.

Any greens to taste. You can take green onions, parsley, dill, spinach – whatever you like. Finely chop them. Salt and spices to your taste.

Add eggs, flakes, and chopped herbs to the grated zucchini. Mix and add your favorite spices. Fry on both sides.

Healthy zucchini dishes – recipe

You will need:

  • Tomato – 4 pcs.
  • Egg – 3 pcs.
  • Onion – 2 pcs.
  • Zucchini – 1 pc.
  • Garlic – 3 cloves.
  • Minced meat – 300 g.
  • Cheese – 150 g.
  • Vegetable oil – 2 tbsp.
  • Parsley – a bunch.

Peel the tomatoes from the skin. Peel the onions and cut them into cubes. Grate the cheese. Peel and chop the garlic.

Cut the zucchini into two halves, after rinsing it in cold water. Peel the insides. Soak the zucchini in water.

Fry the onion in a frying pan in vegetable oil, add garlic in a couple of minutes, then minced meat – fry for 10 minutes. Then add tomatoes, and chopped parsley and simmer for about 5 minutes. Add salt and pepper to taste.

Break eggs and grated cheese into the pan, and mix everything.

Stuff the zucchini with the filling. Grease the foil with vegetable oil, and connect the zucchini. Sprinkle the zucchini with grated cheese and cover with foil. Leave in the oven at 180 degrees for 45 minutes.
