Matjes fillet in cream sauce

Ingredients for 12 servings:

  • 1 cup crème fraîche
  • 1 ½ cups cream (UHT cream)
  • 1 ½ jar mayonnaise (delicacy mayonaise)
  • 4 tbsp cucumber juice
  • 3 tbsp pineapple juice
  • pepper
  • 3 cucumber(s)
  • 2 slices of pineapple
  • 2 apples
  • 1 onion(s), grated
  • 1 onion(s), in rings
  • 12 walnuts
  • 12 fish fillets (matjes fillets)
  • possibly salt

Instructions

Working time approx. 30 minutes; Rest period approx. 1 day; Total time approx. 1 day 30 minutes

Recipe from a chef friend

Mix together the deli mayonnaise, crème fraîche, and cream. Add the cucumber stock, pineapple juice, and pepper. Thinly slice the cucumber (I use 8 small gherkins), cut the pineapple into thin pieces, and finely dice the apples. Grate one onion and slice the other into thin rings. Crack and finely chop the walnuts. Mix in the cucumber, pineapple, apples, onion, and walnuts. Cut the herring fillets into pieces and add them. If you want to keep the fillets whole, you can marinate up to 20 fillets in this amount of sauce. Depending on the salt content of the herring, you may need to add a little salt. Let the herring fillets marinate for 24 hours. (The herring can marinate for up to three days.)
