Pickled herring à la Grandma Lene

Ingredients for 8 servings:

  • 8 fish(es), herring, green, fresh
  • 750 ml vinegar (white wine vinegar)
  • 750 ml water
  • 1 lemon(s)
  • 1 cup oil for frying
  • 100 g flour
  • salt and pepper
  • 3 large onions
  • 5 bay leaves
  • 2 tbsp mustard seeds
  • 1 tbsp juniper berries
  • 1 tsp peppercorns, black
  • 4 tbsp sugar
  • 1 tsp salt
  • 1 chili pepper(s), dried
  • ½ tsp dill
  • ½ tsp all-spice
  • 2 carnations

Instructions

Working time approx. 1 hour 15 minutes; Total time approx. 1 hour 15 minutes

mildly pickled fried herring

Scale and wash the herring, and cut off the heads. Pat dry and drizzle with lemon juice. Season with salt and pepper and coat in flour. Heat a little oil in a pan and fry the herring, one at a time, on both sides until golden brown. This will take 3 to 4 minutes per side, depending on the size. Allow to cool and place in a sufficiently large container with a lid. Slice the onions into rings. Cook the white wine vinegar with the water, sugar, salt, and remaining spices for about 5 minutes. Remove from the heat, add the onion rings to the hot marinade, and allow to cool. Pour the marinade over the herring, cover, and let marinate in the refrigerator or a cool cellar for at least 2 to 3 days.
