Ingredients for 1 servings:
- 450 g flour
- 220 ml water
- 50 g butter
- 1 packet of dry yeast
- 800 g onion(s)
- 200 g bacon
- 1 tbsp oil
- 3 eggs
- 200 ml cream
- 250 g cheese
- salt and pepper
- 1 pinch(s) of sugar
- 1 pinch of nutmeg
- possibly caraway
Instructions
Working time approx. 45 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 45 minutes
For the yeast dough, put the flour, yeast, a pinch each of salt, and sugar in a bowl. Make a well in the center and add the cold water. Add the softened butter and knead into a smooth dough. Let it rest for at least 30 minutes. For the topping, slice the onions into rings and fry them with the bacon in oil. Separately, whisk the eggs with the cream and season with salt, nutmeg, and pepper. Mix both together, season to taste, and add more seasoning if necessary. Finally, roll out the yeast dough, place it on a baking sheet, and press the edges up. Spread the topping on the dough, sprinkle with cheese and (if desired) caraway seeds, and bake in a preheated oven at 200°C for about 30 minutes. The finished onion tart is best served warm. Serve with a crisp salad and a Federweißer (new wine) or a well-chilled white wine.
