well seasoned and a little spicy

The amount of garlic and chili can be varied to your taste. Brown the minced meat, onion, and garlic in hot oil. Stir well to prevent lumps in the minced meat. Add the diced bell peppers and continue to fry for about 5 minutes, until the liquid has evaporated. Mix in the corn and chili and season with salt and pepper. Stir half of the cheese into the corn mixture and fill two casserole dishes. Cover with the remaining cheese and bake in the oven or grill at 200°C (top/bottom heat) for about 20 minutes. Sprinkle with freshly chopped parsley. Larger quantities can also be baked in a single casserole dish. Serve with freshly baked baguette. Tip: If you don’t have any fresh corn on the cob, you can also use well-drained canned corn.
