Ingredients for 1 servings:

  • 180 g powdered sugar
  • 2 eggs
  • ½ lemon(s), zest
  • 1 tsp, heaped aniseed
  • 200 g flour
  • ½ tsp, leveled baking powder
  • 120 g hazelnuts
  • 50 g candied orange peel
  • 70 g raisins
  • Cream for brushing

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Christmas cantuccini with hazelnuts, candied orange peel, raisins and anise.

Beat the eggs and sugar until frothy. Add the lemon zest, anise, flour, and baking powder and knead everything into a smooth dough. Finally, fold in the nuts, candied orange peel, and raisins. Line a baking sheet with baking paper. Form the dough into approximately 2 cm thick rolls and brush them with cream. Be careful to leave plenty of space between the rolls, as the dough will spread quite a bit. Bake at 160°C for approximately 30 minutes. If using two baking sheets, you can use a fan oven. While the rolls are still hot, use a sharp knife to cut them diagonally into 1 cm thick slices.
