Heligoland slices

Ingredients for 1 servings:

  • 500 g flour
  • 175 g syrup
  • 175 g sugar
  • 175 g butter or margarine
  • 100 g candied lemon
  • 100 g almonds
  • 1 tsp, leveled cinnamon powder
  • 1 tsp, leveled clove powder
  • 1 pinch of cardamom powder
  • 1 point baking soda

Instructions

Working time approx. 1 hour; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 15 minutes

Makes approx. 80 pieces

Finely grind the almonds with a rotary grater. Since I don’t like biting into candied lemon peel, I also grate it. Knead all the ingredients one at a time. The dough is very dry, so I lightly moistened my hands with water three more times and kneaded it well. Roll out the dough and cut out shapes as desired. Now bake for 12-15 minutes. I’m using a gas oven, so it’s at 160 degrees Celsius. Electric ovens are about 180-195 degrees Celsius. The cookies are very crispy and crunchy; I love them. I found the “Helgoland Slices” recipe as a handwritten note in a baking book I bought at a flea market. Curious to find out what these Helgoland Slices were all about, I baked them myself.
