Allgäu grinder noodles

Spread the love

Ingredients for 2 servings:

  • 200 g flour
  • 170 g quark, 40% fat
  • 1 egg(s)
  • ½ tbsp butter
  • ½ liter of water
  • n. B. Salt
  • Flour for the work surface

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 35 minutes

Family recipe, vegetarian and quick to prepare

First, knead the flour, quark (I use 40% fat), egg, and salt to taste with a hand mixer, then form the dough again by hand. Dust the work surface with flour and shape the dough into Schupfnudeln/Schleifernudeln by hand (rolling them out with the palm of your hand). Bring the water to a boil in a pan, add the Schleifernudeln to the boiling water. Meanwhile, melt the butter and, after about 10 minutes of cooking, add it to the Schleifernudeln. Stir a few times and add a generous amount of salt to taste. This recipe is simple, yet very tasty, and thrives on its salty flavor. 400 kcal per serving.
