Pasta in zucchini and mustard sauce

Ingredients for 4 servings:

  • 400g penne
  • salt and pepper
  • 350 g zucchini
  • 4 tomatoes
  • 2 cloves garlic
  • 2 sprigs of thyme
  • 2 tbsp oil (olive oil)
  • ½ liter vegetable broth
  • 200 g whipped cream
  • 2 tbsp grainy mustard
  • 2 tbsp sauce thickener, light

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Wash the zucchini, peel large ones, and cut into sticks. Deseed and finely dice the tomatoes. Crush the garlic. Strip and chop the thyme leaves. Cook the pasta, heat the oil, sauté the garlic and zucchini, and deglaze with the broth and cream. Add the thyme. Season with salt and pepper. Simmer for 5 minutes. Stir in the mustard, thicken with a sauce thickener, and heat the tomatoes in the sauce. Serve the pasta with the zucchini mustard sauce, sprinkled with cheese if desired.
