Ingredients for 4 servings:
- 1 kg potato(s), floury
- 1 bunch of soup vegetables
- 4 m.-sized carrot(s)
- 150 g bacon
- 150 g onion(s)
- 2 Cabanossi
- 200 g crème fraîche
- some parsley
- ¾ liter vegetable broth
- salt and pepper
- some coriander

Here’s one of my favorite recipes. It’s from the cook at my old kindergarten. We (the kids) loved it, and I still enjoy eating it today. Dice the potatoes, vegetables, bacon, carrots, and Cabanossi. Brown the bacon, add the potatoes and vegetables. Deglaze with vegetable stock and season with salt and pepper to taste. Cook for about 20 minutes. Add the cilantro and crème fraîche, and puree with a hand blender. Add the Cabanossi cubes. Garnish with chopped parsley and serve with baguette slices.
