Green bean salad Waldburger style

Ingredients for 2 servings:

  • 250 g green beans, fresh or frozen
  • 6 small onions, red
  • 1 tbsp savory, fresh, dried or frozen
  • 1 tsp vegetable broth (strong bouillon)
  • 1 pinch(s) black pepper from the mill
  • 2 tbsp red wine vinegar, mild
  • 4 tbsp orange juice
  • 4 tbsp extra virgin olive oil
  • n. B. Dill tips, fresh
  • e.g. pepperoni threads
  • n. B. Sesame, white
  • n. B. flowers and leaves

Instructions

Working time approx. 15 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 8 minutes; Total time approx. 33 minutes

A typical Upper Swabian bean salad with plenty of onions and no garlic.

Wash the fresh green beans, trim both ends, removing any strings, and cut crosswise into approximately 4 cm long pieces. Blanch in boiling salted water for 8 minutes, then refresh in ice-cold water. Thaw frozen beans and cut into lengths. Trim both ends of the small red onions, peel them, slice them thinly, and mix them into the beans. Add the remaining ingredients and mix well. Stir in the olive oil before serving. Divide among serving dishes, garnish, and serve chilled.
