Ingredients for 6 servings:

  • 500 g potatoes
  • 1,600 ml meat broth or vegetable broth
  • 60 g pork belly (wammerl)
  • 600 g onion(s)
  • Flour or cornstarch
  • 1 apple, sour
  • Horseradish, hot
  • 1 bunch of chives
  • 3 slices of brown or black bread
  • salt and pepper
  • 100 ml cream

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Roast the pork belly with the chopped onion in the lard, dust with flour, and add the meat broth. Cook the diced, peeled potatoes with caraway seeds until al dente. Bring everything to a boil. Add the cream, horseradish, and grated apples to the soup. Season with salt, pepper, and chives. Toast the bread cubes with fresh herbs in butter and pour over the soup. Tip: The soup is detoxifying without the pork belly.
