White sausage salad

Ingredients for 4 servings:

  • 10 white sausages
  • 125 g shallot(s)
  • 1 bunch of radishes
  • ½ bunch chives
  • 5 gherkins
  • 4 tbsp white wine vinegar
  • 5 tbsp sunflower oil
  • 2 tbsp mustard, sweet
  • e.g. salt and pepper

Instructions

Working time approx. 25 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour 50 minutes

Bring water to a boil. Then turn off the heat or reduce it to low, add the white sausages and let it simmer for about 10-15 minutes. Then peel and chop them (I like to slice them lengthwise). While the white sausages are simmering, chop the radishes, shallots, gherkins and chives and place them in a bowl. Mix all ingredients together. Remove the white sausages from the water and peel them. Then cut them lengthwise and then into slices. Place them in the bowl and mix with the other ingredients. Make a vinaigrette with the white wine vinegar, sunflower oil, mustard, salt and pepper. Then mix this with the solid ingredients and let everything rest in the fridge for at least an hour. This goes perfectly with good bread with butter, salt and the remaining chives.
