Pear, bean, bacon salad with mustard dressing

Ingredients for 2 servings:

  • 500 g green beans
  • 1 tbsp salt
  • 2 bulb(s)
  • 2 tbsp olive oil
  • 200 g bacon
  • 2 tsp mustard
  • 1 tsp pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Bring about 1 liter of water to a boil in a pot and add the salt. Meanwhile, wash the beans and trim the ends. Add the beans to the boiling water and cook for about 8-10 minutes at medium heat until al dente. Drain the water and immediately rinse the beans with cold water. Set aside. Wash, peel, quarter, core and thinly slice the pears. Heat the olive oil in a pan over medium heat and fry the diced bacon. Add the pear slices and the beans and heat briefly. Finally, season with salt, pepper, and mustard. Approx. 535 kcal per serving.
