Buttermilk bean soup

Ingredients for 6 servings:

  • 800 g potatoes, mainly waxy
  • 3 cups buttermilk
  • 2 cups whipped cream
  • 1 cup sour cream
  • 800 g beans, white from the jar
  • 100 g butter or margarine
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel the potatoes, boil until soft, drain, and add buttermilk, cream, and sour cream. Add the butter and mash with a masher until smooth. Add the beans and season with salt and pepper. Heat until hot. Do not let the soup boil! Serve with apple pancakes.
