Roast beef cooked at low temperature

Ingredients for 2 servings:

  • 700 g lean roast beef
  • 4 tbsp olive oil
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Preheat the oven to 80°C fan/convection oven. Heat the oil in a pan. When the oil is hot, sear the roast beef on all sides for about 2 minutes. Place the meat on the grill and bake at 80°C for 2 hours. After the cooking time, turn off the oven and let the meat rest in the oven for about 5 minutes, then serve. Season to taste at the table. Serve with fries and herb butter.
