Ingredients for 3 servings:

  • 750 g potatoes
  • 150 g bacon, streaky
  • Salt
  • 3 eggs
  • 3 tbsp milk
  • 150 g diced ham
  • 2 tomatoes, diced
  • Parsley, finely chopped

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Wash the potatoes and boil them in their skins for 30 minutes. Then rinse them with cold water and peel them. Let them cool, then slice them. Dice the bacon and fry them in a pan. Add the potato slices, season with salt, and fry until light brown. Whisk the eggs with the milk and a little salt. Add the ham cubes. Add the tomatoes to the egg mixture and pour over the potatoes. When the egg mixture has set, the farmer’s feast is done. Sprinkle with parsley and serve.
