Ingredients for 2 servings:

  • 4 eggs
  • 1 large spring onion(s), optionally also small vegetable onion
  • 1 m.-sized tomato(s)
  • 40 g meltable cheese, e.g. Maasdammer (sliced ​​or grated)
  • 2 m.-sized potatoes, cooked (e.g. from the day before)
  • some oil
  • salt and pepper
  • Chili powder, optionally 1 small chili pepper
  • 1 pinch(s) garlic powder, optionally some fresh garlic

Cut the tomatoes, potatoes, and onions into small pieces. Heat a little oil in a pan. Meanwhile, grate or finely chop the cheese. Beat the eggs with a fork. Season with pepper, salt, a little chili powder, and a pinch of garlic powder. Fry the onions in the oil until translucent. Add the potatoes. Fry the onions and potatoes together over medium heat for a few minutes. Then add the tomatoes, cheese, and beaten eggs and stir continuously until set. Serve hot.
