Baked potato pancakes

Ingredients for 4 servings:

  • 1 kg potatoes, peeled and coarsely grated
  • 1 onion(s), finely grated
  • 4 eggs
  • 1 tsp, leveled salt
  • some nutmeg, grated
  • some vegetable fat, for frying
  • 200 g ham, cooked, diced
  • 150 g cheese (Emmental), grated
  • possibly wheat flour

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

with cooked ham and cheese

Place the grated potatoes in a sieve and squeeze the excess water gently. Transfer to a bowl, add the eggs, onion, salt, and nutmeg (to taste), and stir. Thicken with a little flour if necessary (the batter should be thick). Heat the oil in a frying pan, ladle the batter into the pan, and form small, oval pancakes (approx. 17 x 10 cm, three in a 24 cm pan). Fry until golden brown on both sides. Transfer to an ovenproof dish, sprinkle with the ham cubes, then the cheese. Bake in a preheated oven at 200°C for 10-15 minutes (until the cheese is bubbling and lightly browned). Serve and enjoy.
