Ingredients for 4 servings:
- 8 m.-sized potatoes
- 3 eggs
- 5 tbsp oat flakes
- 2 tsp, leveled salt (or smoked salt)
- Oil (e.g. rapeseed oil) or mineral water
- e.g. vegetables, salmon, cocktail shrimps……
- n. B. Cheese, grated

A fantastic recipe from my great-grandmother.
Peel the potatoes and grate them by hand or in a food processor, then stir in the salt, oats, and eggs. If you like, you can also stir in cocktail shrimp, smoked salmon, bacon, grated cheese, or vegetables such as corn, mushrooms, etc. Now heat plenty of oil in a pan and place the dough into the oil with a spoon, flattening it slightly. The amount varies depending on how large and thick you want your cookies to be. If you prefer a lower-calorie option, you can also heat some mineral water in a non-stick pan and bake your cookies in it; it just takes considerably longer! When the edges start to brown, turn the cookies over or let them sizzle on both sides until the desired brownness and crispness is achieved. If you can’t finish all of the grated cookies, they also taste great cold, for example, on bread with jam.
