Ingredients for 4 servings:
- 1 kg smoked pork chop, whole
- 4 carrots, peeled, diced
- ½ celeriac, peeled, diced
- 2 leeks, quartered lengthwise and then cut into 1 cm pieces
- 2 kg potatoes, peeled, diced
- 2 tbsp butter
- 1 tbsp flour
- Salt
- pepper
- marjoram

Working time approx. 20 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 20 minutes

Boil the meat, covered with water, for 90 minutes. Remove, let cool, and dice finely. Add the vegetables to the broth and simmer for a total of 20 minutes. Melt the butter in a separate saucepan, dust with flour, and deglaze with broth, stirring constantly. Stir the roux into the stew and bring to a boil for 3-4 minutes. Season to taste with the spices and heat the meat cubes into the stew.
