Ingredients for 4 servings:

  • 3 large beefsteak tomatoes
  • 4 Pepper, medium hot
  • 1 onion(s)
  • 2 tbsp butter
  • 5 eggs
  • Salt
  • Paprika powder

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Tomato eggs

Peel and chop the tomatoes, finely chop the onion and peppers. Heat the butter and sauté the onions and peppers. When the onions are golden brown, add the tomatoes and sauté over medium heat for about 10 minutes, stirring occasionally. Season with salt. Crack the eggs over the tomatoes and mix lightly. Cover the pan and let the mixture set over medium heat. Serve sprinkled with paprika.
