Coffee-Cinnamon Muffins

Ingredients for 1 servings:

  • 1 tbsp oil
  • 1 egg(s)
  • 70 ml coffee
  • 5 tbsp low-fat yogurt
  • 140 g flour
  • 2 tsp baking powder
  • 2 tsp cinnamon
  • 3 tbsp sugar
  • 3 tbsp brown sugar
  • 50 g oat flakes
  • 1 apple
  • 1 tbsp beet syrup

Whisk together the oil, egg, coffee, and yogurt in a bowl. In a separate bowl, whisk together the flour, baking powder, both sugars, cinnamon, and oats and add to the liquid mixture. Peel and grate the apple, then add it to the batter along with the beetroot syrup. Grease a muffin tin, fill the muffin tins with the batter, and bake at 200°C for 20-25 minutes. For variation, you can add a jar of morello cherries to the batter, then perhaps replace the coffee with cherry juice. If you like your muffins a little sweeter, you can increase the amount of sugar to taste.
