Ingredients for 4 servings:
- 3 tbsp parsley, chopped
- 3 tbsp mint, chopped
- 2 tbsp dill, chopped
- 1 pack of dough (Yufka dough), from the Turkish dealer
- 400 g feta cheese, preferably low in fat
- 1 egg(s)
- pepper
- Oil for frying
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Chop the herbs and crumble the cheese into small pieces. Combine the herbs, cheese, and egg in a bowl, season with pepper, and mix well. Form the yufka dough into rectangles. Place about 1 tablespoon of the herb and cheese mixture on the bottom end of each rectangle. Then lightly fold the dough over the filling on the left and right sides to prevent leakage and roll the whole thing into a cigar shape. Seal the ends with wet fingers. Repeat this process until all the dough and/or filling is used up. Heat enough oil in a pan so that the rolls float. Place the rolls in the very hot oil and fry until crispy and brown. Eat while warm, if possible. Serve with a yogurt dip of your choice. Tip: Cover the yufka dough with a damp kitchen towel before and during processing to prevent it from becoming brittle. Any broken parts can be covered with water. You can also prepare the rolls with a sophisticated seasoned minced meat mixture or other dry fillings.
