Simple Turkish potato salad

Ingredients for 6 servings:

  • 1 kg potatoes
  • ½ lemon(s), the juice
  • 3 tsp spice(s) (sumac, from Turkish grocery store)
  • 1 large onion(s) (also red), diced
  • 2 ½ tsp salt
  • 1 pinch of pepper
  • some stalks of parsley, flat, plucked
  • 200 g corn (can)
  • 200 g kidney beans (can)
  • 1 pack of salad seasoning mix (garden herbs)
  • 3 tbsp olive oil or rapeseed oil

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

First, peel the potatoes and cut them into fairly small cubes. Then boil them with 2 teaspoons of salt until tender (takes about 20 minutes). Let them cool in a bowl. Then add the remaining salt, pepper, lemon juice, corn, kidney beans, diced onion, and oil. Sprinkle 1 packet of salad seasoning over the potatoes. Tear the parsley and add it. Mix everything thoroughly and finally season with sumac. Tip: If desired, you can also add finely chopped gherkins.
