Potato salad with spring onions

Ingredients for 4 servings:

  • 1 kg potatoes, young
  • 3 spring onions
  • 3 tbsp balsamic vinegar
  • 4 tbsp olive oil
  • oregano
  • Mustard
  • oregano
  • Thyme
  • basil
  • some honey
  • salt and pepper

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Brush the potatoes thoroughly. Then boil them in salted water until tender and let them cool. Slice them with the skin on. Then clean the spring onions, finely slice them (retaining the green parts), and add them to the potatoes. In a separate bowl, combine the herbs with vinegar, oil, a little honey, and mustard. Season with salt and pepper. Pour the dressing over the salad and toss everything thoroughly.
