Ingredients for 5 servings:
- 250 g bulgur (köftelik), from the Turkish supermarket
- e.g. water, boiling
- 2 tbsp tomato paste
- 2 tbsp paprika paste
- 5 tbsp oil
- 1 medium-sized onion(s), finely diced
- ½ cucumber(s), hollowed out, diced
- 2 tomatoes, hollowed out, diced
- a few stalks of parsley
- salt and pepper
- 2 tbsp paprika powder, sweet or hot
- 1 lemon(s), the juice
Instructions
Working time approx. 30 minutes; Rest time approx. 30 minutes; Total time approx. 1 hour
Place the bulgur in a bowl and pour boiling water over it. The water should be about 2 cm above the bulgur, then let it simmer. In the meantime, sauté the onion in the oil, add the paprika and tomato paste, and simmer for a while. Deglaze with about 5 tablespoons of water and pour over the bulgur. Stir well and let cool. Once the bulgur has cooled completely, add the diced tomatoes, cucumber, and lemon juice. Stir well and season with salt, pepper, and paprika. Finally, add the parsley. If you like, you can add other vegetables like hot pointed peppers, etc. The sky’s the limit.
