Ingredients for 6 servings:
- 500 g couscous
- 500 ml vegetable broth or stock
- 2 tbsp tomato paste
- 3 bell peppers, colored
- 1 can of corn
- 5 spring onions
- 2 tbsp balsamic vinegar
- 5 tbsp olive oil
- 3 tbsp curry powder
- 2 tbsp soy sauce
- salt and pepper
- chili powder
- 1 bunch of parsley
- 1 bunch of chives
- 1 bunch of basil

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Place the couscous in a large bowl, pour over the boiling vegetable stock, and let it stand for 10 minutes. Meanwhile, finely chop the bell pepper, parsley, basil, and spring onion. Once the couscous has finished cooking, add the curry powder, olive oil, vinegar, and soy sauce and mix by hand. Now add the chopped ingredients, the corn, and tomato paste, and mix to combine. Finally, season to taste with the spices and sprinkle with parsley. It goes perfectly with grilled meat.
