Ingredients for 4 servings:

  • 500 g leek
  • 2 red bell peppers
  • 2 tbsp olive oil
  • 4 eggs
  • 4 tbsp milk
  • Salt
  • Pepper, freshly ground
  • Paprika powder, sweet
  • 200 g feta cheese, diced
  • 12 green olives stuffed with peppers

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Clean and wash the leeks, halve if necessary, and cut into approximately 3 cm pieces. Clean and wash the bell peppers and cut into small pieces. Heat the fat in a pan. Add the bell peppers and leeks and sauté for about 5-10 minutes (add a little mineral water if necessary). Dice the feta cheese. Whisk the eggs and milk. Season generously with salt, pepper, and paprika. Add the olives and cheese to the vegetables. Pour the egg mixture over the mixture, cover, and let it set over low heat for about 10 minutes. This goes perfectly with flatbread or rice and a glass of red wine!
