Turkish minced meat rolls with cucumber yogurt and salad

Ingredients for 4 servings:

  • 1 bunch parsley, chopped
  • possibly onion(s), finely diced
  • 600 g minced beef or lamb
  • 2 eggs
  • some sea salt
  • pepper
  • ½ tsp cumin, ground
  • 4 pinches of caraway powder
  • 4 pinches of paprika powder
  • some oil (sunflower oil)
  • 1 piece(s) cucumber(s), approx. 20 cm
  • 2 garlic cloves
  • ½ bunch of dill
  • 500 g yogurt 3.5%
  • 1 salad according to season and taste
  • possibly dressing, light as desired

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

After food combining: protein dish, light summer dish, can also be grilled

Knead the minced meat with parsley, onions (optional), egg, and the spices, and season generously to taste. Form the mixture into 15-20 small rolls. Fry the rolls in a pan or on the grill until browned all over. Wash, peel, and coarsely grate the cucumber. Finely chop the garlic cloves. Wash and pat dry the dill, then finely chop or mince. Stir the yogurt in a bowl until smooth, add everything, and season generously with salt and pepper. Mix a salad of your choice, tossing with a light dressing if desired. Arrange everything together nicely on plates.
