Ingredients for 4 servings:

  • 300 ml water
  • 1 tsp salt
  • 7 tsp lemon juice (also concentrate)
  • 4 tsp tomato paste
  • 10 tsp bulgur, fine
  • ¼ onion(s), finely diced
  • ½ tomato(s), cut into large cubes
  • ¼ bell pepper(s), red or yellow, medium diced
  • 4 tsp, heaped Ajvar, mild
  • 3 tsp parsley (frozen)
  • 2 tsp oil

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

my own creation with bulgur, peppers, tomatoes and onions

Add the onions, tomatoes, and bell peppers to a bowl. Add the ajvar, parsley, and oil to a bowl and mix. Combine 300 ml of water with 1 teaspoon of salt, 7 teaspoons of lemon juice, and 4 teaspoons of tomato paste and heat in a saucepan. Add the bulgur, stir everything together, and let it swell for about 1 minute. Combine all ingredients and let it cool in the refrigerator until ready to serve. The bulgur salad tastes best when it sits for a few hours and is served slightly chilled. Bulgur is available from Turkish retailers, and ajvar is a pepper and eggplant spice mix that can be found in supermarkets near sambal oelek, pickled olives, or similar spice pastes.
