- 400 g leaf spinach (frozen)
- 1 small onion(s)
- 3 eggs
- 200 g feta cheese
- some mineral water
- lots of oregano, fresh

This delicacy has probably been our number one favorite dish ever since we first tasted it in a Turkish restaurant – unfortunately, we don’t know the original name. It’s quick to prepare and tastes fantastic. We hope you enjoy this culinary delight as much as we do. First, you need to pre-blanch the spinach. Simply place the appropriate amount of spinach leaves in a pot with a little water and sauté for about 10 minutes. In the meantime, peel the onion and chop it into very small pieces. Then you can prepare the feta cheese. Simply take small pieces of it in your hand and crumble them. Store on a separate plate or bowl. Drain the spinach (in a colander) and, once it has cooled slightly, wring it out very well. At the same time, you can fry the finely chopped onion in a pan with a little butter or oil. Once the onions are slightly translucent, add the spinach. If possible, tear the wrung-out spinach into the pan (it should sit loosely in the pan and not in a squashed clump!). While the spinach leaves are frying in the pan for about 5 minutes (stirring regularly and distributing the onions well into the spinach), you can start mixing the eggs. Beat the eggs with a fork, just like you would scramble them, in a cup or similar dish. Add nutmeg, pepper, paprika, and a little oregano for a nice flavor. Add a splash of sparkling mineral water (this lengthens and loosens the egg). Pour the beaten and seasoned eggs into the pan over the spinach and let it all come together (careful—it can burn quickly!). Once the egg is set, split the spinach bites in half and arrange one on each plate. Sprinkle the crumbled feta cheese over each bite and then generously scatter the oregano over it. Serve immediately. It tastes best with fresh, warm flatbread or, alternatively, a few slices of toast. While it may not seem like much, this meal is not only healthy and very tasty, but also very filling.
