- 3 eggs
- 100 g leaf spinach
- 65 g feta cheese, light
- 65 g leek
- salt and pepper

Heat a pan over medium heat with a little oil (or butter). Wash and finely chop the spinach, and add it to the pan. Stir until wilted. Meanwhile, crack three eggs into a bowl and whisk with salt, pepper, and your choice of seasonings. Cut the feta cheese and leek into small pieces and add them to the bowl with the eggs. Once the spinach is ready, add everything to the pan over medium heat. To get a nice, creamy scrambled egg, don’t overheat the pan and stir the eggs constantly. You can leave the eggs in the pan for a while, if you like, and serve them with a bread roll or slices of charred salami. It also tastes great on its own. Per serving, approximately 442 kcal.
