Lentil soup made from red lentils

Ingredients for 4 servings:

  • 1 liter vegetable broth
  • 250 g lentils, red
  • 1 m.-sized onion(s)
  • 1 carrot(s)
  • 1 tbsp butter
  • 1 tbsp salt
  • lemon juice

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Melt the butter and sauté the chopped onion until golden brown. Gradually add the broth. Add the lentils, salt, and finely chopped carrot and simmer for about 40 minutes. Purée the soup with an immersion blender. Season to taste and add a little more salt if desired. The soup can now be served in bowls and finished with a squeeze of lemon! Delicious with fresh flatbread!
