Canarian green garlic sauce

Ingredients for 1 servings:

  • 1 bulb(s) garlic
  • 1 tsp salt
  • 200 ml oil
  • 50 ml vinegar (white wine vinegar)
  • 1 bunch of parsley or coriander
  • ½ tsp cumin

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Green Mojo

Peel and roughly chop the garlic. Place the garlic, salt, cumin, and 50 ml of vinegar in a blender or process with an immersion blender until all ingredients are finely chopped. Pluck the coarse stems from the parsley or coriander and add them to the blender. Slowly add the oil while blending continuously. Season to taste and add more vinegar if desired. Serve with bread or rolls, as a dip, or as a small appetizer. Also great with potatoes or wild potatoes (wedges).
