Artichokes with mint

Ingredients for 3 servings:

  • 1 can artichoke hearts (drained 240 g)
  • 3 tbsp olive oil
  • 1 garlic clove(s)
  • ½ lemon(s), organic
  • some sugar (1/4 – 1/2 tsp)
  • 1 tbsp mint, chopped fresh
  • Salt
  • Black pepper, freshly ground

Instructions

Working time approx. 15 minutes; Rest time approx. 3 hours; Cooking/baking time approx. 10 minutes; Total time approx. 3 hours 25 minutes

Tapas

Drain the artichokes top-down on kitchen paper and halve them crosswise. Grate the zest of half a lemon and squeeze out the juice. Fry the artichokes in 2 tablespoons of olive oil for about 3-4 minutes until lightly browned. Turn them over, then add the crushed garlic, sugar, lemon zest, and mint and fry for another 2 minutes. Transfer to a tapas dish. Add 1-2 tablespoons of lemon juice and the remaining olive oil to the warm pan. Season with salt and pepper and pour over the warm artichokes. Let it chill for a few hours. This quantity is enough for 4 people if you’re serving multiple tapas.
