Ingredients for 1 servings:
- 200g Manchego
- 3 tbsp olive oil
- 1 pinch of salt
- some pepper, from the mill
- 1 tbsp parsley, flat, chopped
- 1 Pepper
- 1 garlic clove(s), squeezed or finely chopped
- 1 tbsp lemon juice
- 1 sprig(s) of thyme
- 1 rosemary sprig(s)

Working time approx. 15 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 15 minutes
for the tapas buffet
Dice the cheese. Finely chop or press the garlic. Roughly chop the parsley. Pick the thyme leaves and chop the rosemary sprig into pieces. Finely chop the chili peppers. Depending on your preference, remove the seeds and skins and/or use only part of the pepper. Mix all ingredients well. Stir in the cheese cubes and let them sit in the refrigerator overnight, stirring occasionally.
