Peanut sauce with coconut milk

Ingredients for 4 servings:

  • ½ onion(s)
  • 1 small garlic clove(s)
  • 2 tbsp peanuts, chopped
  • 200 ml vegetable stock
  • 4 tbsp coconut milk
  • 3 tbsp peanut butter (peanut butter with pieces)
  • ½ tbsp peanut butter, fine (no chunks)
  • 1 dashes soy sauce
  • salt and pepper
  • Paprika powder
  • Sugar

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Finely dice the onion and garlic. Sauté the onion and garlic in a small saucepan with a little fat until translucent, then season with paprika and salt. Sauté the chopped peanuts (without the dark shells). Add the peanut butter and simmer. Add the vegetable stock and bring to a boil with the coconut milk. Now add the peanut butter and soy sauce. Season to taste with salt, pepper, and a pinch of sugar. If the peanut sauce becomes too thick, add a little coconut milk or vegetable stock.
