Crema Catalan, quite simply

Ingredients for 4 servings:

  • ½ liter of milk
  • 4 egg yolks
  • 1 tbsp cornstarch
  • ½ lemon(s), untreated
  • 100 g sugar
  • 1 vanilla pod(s)
  • powdered sugar

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Separate the eggs, scrape out the vanilla pod, grate the zest of half a lemon, and mix about 1 tablespoon of cornstarch with a little water. Gently heat the milk, egg yolks, sugar, and vanilla, then add the lemon zest. While stirring vigorously, add the cornstarch until the mixture thickens. Pour into shallow bowls and let cool until lukewarm. Before serving, sprinkle thickly with powdered sugar and caramelize the sugar with a blowtorch (available at hardware stores) until it’s a nice brown color. Granulated sugar will also work.
