Ingredients for 2 servings:

  • 3 eggs
  • 250 ml milk
  • 8 tbsp sugar
  • possibly vanilla sugar

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Spanish delicacy

Beat the eggs with 3 tablespoons of sugar until fluffy. Stir in the milk and continue stirring for about 1 minute; it should be nice and creamy. You can also stir in a packet of vanilla sugar. Caramelize the remaining sugar in a small saucepan. Don’t forget to stir. When the sugar is nice and brown and runny, remove the pan from the heat and swirl it so the caramel spreads to the edges. Pour in the egg mixture, cover the pan with aluminum foil, and simmer in a water bath for about 1 hour. Alternatively, place the pan in a water bath in the oven at 200°C for about 1 hour. When the center has set, remove the flan from the heat and let it cool. Then turn it out onto a plate.
