Ingredients for 3 servings:
- 250 g pasta, e.g. Farfalle or to taste
- 150 g surimi, cut into small slices
- 2 eggs, hard-boiled, cut into small cubes
- 120 g dates, pitted, cut into small cubes
- 40 g anchovies (anchoas, pickled anchovies), finely chopped
- 5 tbsp extra virgin olive oil
- salt and pepper
- some chili flakes
- 1 dashes lemon juice
Instructions
Working time approx. 15 minutes; Rest time approx. 1 minute; Cooking/baking time approx. 8 minutes; Total time approx. 24 minutes
Pasta salad with dates and crab meat (surimi)
Cook the pasta in plenty of salted water until al dente and let cool. In a bowl, combine the pasta, dates, and anchovies with 2 tablespoons of olive oil. Then add the surimi. Mix the eggs and 2 tablespoons of olive oil with a fork until a smooth cream forms, including egg pieces. Add the cream and mix well. Season the salad with a squeeze of lemon juice, salt, pepper, and a little chili.
