Caldoso Rice

Ingredients for 4 servings:

  • 600 g chicken breast fillet(s), diced
  • 1 small can of green beans
  • 300 g rice (round grain)
  • 1 onion(s)
  • 2 cloves garlic
  • Salt
  • pepper
  • Paprika powder, sweet
  • 1 ½ tsp spice mix (colorante), alternatively turmeric or saffron
  • 2 tbsp olive oil
  • 1 ½ liters of water
  • 1 lemon(s)

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Spanish rice

Finely chop the onion and garlic. Season the meat with salt, pepper, and paprika and sauté in olive oil. Then add the onion and garlic and fry until translucent. Drain the beans, add them to the meat, and sauté briefly. Add the water, season with salt, pepper, and paprika, and bring to a boil. Once boiling, add the colorante. This gives the rice its beautiful yellow color and Spanish flavor. Sprinkle with the rice and simmer for 20 minutes, until the rice is tender. Serve on deep plates and drizzle with lemon juice. Colorante is a cheap alternative to saffron in Valencia. It can be substituted with turmeric or saffron.
