Swedish mocha sheet cake

Ingredients for 1 servings:

  • 2 eggs
  • 300 g sugar
  • 1 packet of vanilla sugar
  • 2 tbsp cocoa powder
  • 300 g flour
  • 2 tsp baking powder
  • 150 g butter
  • 1 cup milk
  • 4 tbsp coffee, hot
  • 4 tbsp butter, melted
  • 200 g powdered sugar, sifted
  • Desiccated coconut

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

Base: Beat eggs, sugar, and vanilla sugar until fluffy. Stir in butter (melt in the microwave for 1 minute). Sift together the cocoa powder (reserve 1 teaspoon), flour, and baking powder. Stir in alternately with the cup of warmed milk. If lumps form, place in a hot water bath and stir until they disappear. Pour the batter onto a greased or parchment-lined baking sheet and bake on the bottom rack at 180 degrees Celsius (top/bottom heat) for 20 minutes. Glaze: Mix the icing sugar and 1 teaspoon of cocoa powder, then add the hot coffee and melted butter. Mix everything well and spread immediately onto the hot cake. If desired, sprinkle with desiccated coconut as soon as possible.
