Ingredients for 1 servings:
- 3 eggs
- 500 g carrot(s)
- 200 g sugar
- 1 tsp baking powder
- 200 g flour
- 1 packet of vanilla sugar
- 150 g butter, melted
- 150 g cream cheese
- 75 g butter, melted
- 150 g powdered sugar, sifted
- 1 tsp vanilla sugar
- ½ lemon(s)
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 10 minutes
Swedish carrot cake with cream cheese topping
Dough: Finely grate the carrots. Beat the eggs and sugar until fluffy. Stir in the softened butter. Add the flour, baking powder, and vanilla sugar and mix everything together. Finally, add the grated carrots. Pour the dough into a greased springform pan and bake at 180°C for about 40 minutes. Topping: Mix the cream cheese, powdered sugar, and vanilla sugar. Add the melted butter and lemon juice and beat until creamy. Chill the topping and spread it over the cooled cake.
